Ingredients
2 canned chipotle chiles in adobo sauce
2 tbsp. fresh lime juice
1/4 tsp. Ground Black Pepper
1/4 cup(s) yellow onion, diced
1 (32 oz) pkg Brookshire's Queso Easy, cubed
1 tbsp. Fresh cilantro, chopped
1 tbsp. Olive Oil
1/4 tsp. Ground Cumin
2 jalapenos, seeded and diced
1 clove(s) Garlic
1/2 tsp. Kosher Salt
2 tbsp. Unsalted Butter
1 (14 oz) can diced tomatoes
Directions
  1. Place chipotle chiles, cilantro, garlic, lime juice, olive oil, salt, pepper and cumin in food chopper. Puree until smooth.
  2. In medium saucepan, warm the butter with chipotle mixture over medium-low heat. Add onion and jalapenos. Cook until softened (about 5 minutes), stirring occasionally. Add diced tomatoes; begin adding cubes of Queso Easy, a few at a time. Stir until melted before adding more.
  3. Repeat process until all cheese is incorporated. Cook over low heat until thick and creamy.
  4. Transfer queso to serving bowl, small slow cooker or chafing dish over a flame. Serve with tortilla chips.
